Ayam Panggang Mnor

1 Kati bawang
½ kati bawang putih
5 btg serai
RM 2 cabai kering
RM 2 halia
Garam secukup rasa
1 botol kicap Tamin
1 botol cili sauce Maggi
1 botol Ros Vanilla
1 botol tomato Heinze
1 tin ice cream soda
½ kati gula merah
Lada hitam / Sauce Black pepper
Basuh ayam dgn ~ asam jawa 1 kampit
~ Tepung Gandum 1 kampit.

Bahan di atas adalah untuk lbh/krg 30 ~ 40 ktl ayam
Perap ayam selama 3 ~ 4 jam.

SAMBAL CICAH BBQ

Bawang Merah (hiris)
Asam jawa
Cabai masak
Kicap
Belacan secukup rasa
Gula

Blend saja bahan di atas dan boleh dihidangkan.

Udang Masala



BAHAN-BAHAN:

1 kg udang

5 ulas bawang merah (kisar)

5 tangkai cili hijau (hiris)

2 biji tomato (potong halus)

2 tangkai daun kari

1 sudu kecil bawang putih (kisar)

1 sudu kecil halia (kisar)

1 sudu besar lada putih

1 sudu besar jintan putih

1 sudu besar jintan manis

1/2 sudu besar serbuk kunyit

10 biji gajus (kisar)

50 gm santan

50 ml minyak

750 ml air

Sedikit garam

CARA MENYEDIAKAN:

1.Panaskan minyak dan tumiskan bawang merah, daun kari, bawang putih

dan ha­lia sehingga naik bau.

2.Kemudian ma­suk­­kan lada putih, jintan manis, jintan putih dan serbuk kunyit.

Kacau rata seketika dan masukkan air.

3.Renehkan di atas api sederhana sehingga air mendidih.

4.Se­te­lah­ itu, barulah masukkan udang ber­sa­ma­ tomato, gajus, cili hijau dan

cili me­rah.

5.Apabila air kering sedikit, masuk­kan pula santan dan garam secukup ra­sa.­

Biarkan di atas api sederhana sehingga udang masak barulah angkat dan

hidangkan.

Beef Rendang

Beef Rendang

Ingredients
  • 600g beef topside, cubed

    Grind together:
  • 4 tbsp chilli boh
  • 7 shallots
  • 5 cloves garlic
  • 4cm piece ginger
  • 2 onions
  • 4 stalks lemon grass, finely sliced
  • 3cm piece galangal
  • 1 tbsp cumin powder
  • 1 tbsp fennel powder
  • 1 litre thick coconut milk (extract from four grated coconuts)
  • 1 litre water
  • 1/2 cup kerisik (pounded dry-fried grated coconut)
  • 1 tbsp finely-shredded daun limau purut (lime leaves)

    Seasoning:
  • 1 tsp salt or to taste
  • 1 tsp brown sugar or to taste

    Method
    Combine beef, coconut milk, water and ground ingredients in a deep saucepan. Simmer over low heat for one and a half to two hours until beef turns tender.

    Add kerisik and continue to cook until the gravy turns thick and dry. Add seasoning and daun limau purut. Cook until beef is almost dry.

  • tempoyak recipe

    Ingredients
    • 1 ikan patin
    • 75gm tempoyak
    • 10gm daun kesum
    • 10gm shallot
    • 10gm ginger
    • 10gm garlic
    • 10gm turmeric
    • 10gm galangal
    • 1 nos lemon grass
    • 15gm bird eye chilli
    • salt
    • 3 nos tamarind(dry)

    Directions
    1. u can blend or ketuk (using lesung batu-the best way) the shallot,ginger,garlic,turmeric,galangal & bird eye chilli.
    2. in a pot, add about 500ml of water.
    3. place the fish in.
    4. add in the blended ingredients,tempoyak,daun kesum & dry tamarind.
    5. on the fire, in moderate.
    6. season to taste.
